  • Top Tip: If you want to add salt to taste, then don’t do it until the very end. Salt makes lentil toughen up and they won’t break down into the soft & tender little beads that thicken up sauces and stews. Add the salt after they have cooked.
  • Top Tip: Asafoetida isn’t essential although it does add a nice garlic tang to this curries and also acts as an anti-flatulent.  Handy when eating lentils if you catch my drift.  I bought mine from an Asian food store.
