Whether you’re making a Curry, Falafel or Hummus, a great tip is to remove the skins from the chick peas for a smoother more velvety end result and less, ahem, flatulence too, but lets not linger on that point too long.
After soaking your dried Chick Peas, place them inside a folded tea towel and vigorously rub. The skins will come away as transparent little shells leaving the more yellow Chick pea from within. the only bind is picking out the shells from the peas, but pour yourself a glass of something nice and enjoy the task. It’s well worth it in the end.
